Method
- Preheat oven to 350°F.
- If using fresh potatoes, boil 10-15 minutes, drain.
- Mix potatoes with butter, salt, pepper, onion, cream of chicken soup, sour cream, and cheese.
- Spread into 9x13 baking dish.
- Mix cornflakes with melted butter; sprinkle on top.
- Bake 1 hour.
- Rest 5–10 minutes before serving.
