Classic Macaroni Salad

Creamy, classic macaroni salad with carrots and celery, perfectly chilled and ready for potlucks or family dinners

Ingredients
  

  • 2 large eggs
  • 1 cup mayonnaise
  • 1/4 cup white vinegar
  • 2/3 cup white sugar
  • 2 1/2 tablespoons yellow mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 stalks celery chopped
  • 2 large carrots sliced or grated
  • 1 teaspoon onion powder
  • 3 cups elbow macaroni cooked and drained

Method
 

  1. Cook macaroni according to package directions. Drain and rinse with cold water.
    Whisk together mayonnaise, vinegar, sugar, mustard, salt, pepper, and onion powder.
    Chop eggs and stir into dressing with celery and carrots.
    Fold in macaroni until coated.
    Adjust consistency with extra dressing if needed.
    Cover and refrigerate for at least 2–4 hours, preferably overnight.
    Serve chilled and enjoy!

Notes

Optional Variations:
  • 1/2 cup bell peppers
  • 1–2 teaspoons prepared horseradish
