Ingredients
  

  • 8 frozen hash browns thawed and shredded or diced
  • 4 cups shredded cheddar cheese
  • 1 cup fully cooked diced ham or cooked crumbled bacon (or do half and half!)
  • 7 large eggs
  • 1 cup milk
  • ½ teaspoon salt
  • ½ teaspoon ground mustard

Method
 

  1. Directions
  2. Preheat oven to 350°F. Grease a 9x13 baking dish.
  3. Layer the thawed hash browns evenly on the bottom of the dish.
  4. Sprinkle cheese and your choice of meat (or leave meat out for a vegetarian version).
  5. Whisk together eggs, milk, salt, and ground mustard in a bowl until smooth.
  6. Pour egg mixture evenly over the top of the potatoes and cheese.
  7. Cover with foil and bake for 1 hour.
  8. Uncover and bake an additional 10–15 minutes, until the top is golden and the center is set.
  9. Let rest for 5–10 minutes before serving warm.
