German Spaetzle (Traditional Egg Noodles)

Ingredients
  

  • 2 cups all-purpose flour
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 cup water

  • 1 Mixing bowl
  • 1 Spaetzle board
  • 1 Stainless-steel scraper
  • 1 Large pot
  • 1 Slotted spoon

Method
 

  1. In a bowl, combine flour and salt.
  2. Make a well and add eggs. Mix together.
  3. Add water gradually and mix until smooth. Continue mixing until air bubbles form.
  4. Bring a large pot of salted water to a boil.
  5. Butter a spaetzle board and spread a thin layer of dough on top.
  6. Use a scraper to push small pieces of dough into the boiling water.
  7. Cook until spaetzle float to the surface.
  8. Remove with a slotted spoon and repeat with remaining dough.
  9. Serve warm with your favorite toppings.

Optional:
  • Substitute 2 additional eggs in place of water for a richer dough
  • Dough should be thick but spreadable
  • Mix well—air bubbles are key
  • Best served fresh, but can be reheated in butter
