Method
- Boil cubed potatoes in salted water until fork tender, about 10–12 minutes. Drain and cool slightly.
- Cook bacon until crispy and crumble.
- In a bowl whisk together mayonnaise, vinegar, mustard, sugar, salt, pepper, and onion powder.
- In a large bowl combine potatoes, chopped egg, bacon, and chives.
- Add dressing and mix gently until evenly coated.
- Refrigerate for at least 1 hour before serving.
Notes
Avoid over-cooking the potatoes to prevent a mushy texture.
Celery and paprika can make great additions.
