- Place chicken breasts in the slow cooker.
- Add onion, oregano, thyme, salt, pepper, bay leaf, cream of chicken soup, and chicken broth.
- Cover and cook on high for 3 hours.
- Remove chicken and shred with two forks.
- Return shredded chicken to the slow cooker.
- Add celery, carrots, peas, and garlic.
- Cut biscuits into quarters and place on top of the chicken mixture.
- Cover and cook on high for an additional 1½ hours.
- Sprinkle with Parmesan cheese and parsley before serving.
