Ingredients

  • 2 cups chopped strawberries
  • 2 cups chopped cucumbers
  • 1/2 cup crumbled feta cheese
  • 5 fresh mint leaves chopped
  • Salt to taste
  • Black pepper to taste
Lemon Dressing
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon honey
  • 1/2 teaspoon vinegar
  • 1/4 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Equipment

  • 1 Large mixing bowl
  • 1 Small bowl
  • 1 Whisk
  • 1 Cutting board
  • 1 Knife

Method

  1. Wash the strawberries and cucumbers and pat dry.
  2. Remove the stems from the strawberries and chop them into bite-sized pieces.
  3. Chop the cucumbers into bite-sized pieces.
  4. Add the strawberries, cucumbers, crumbled feta, and chopped fresh mint to a large bowl.
  5. Season lightly with salt and pepper.
  6. In a small bowl, whisk together the olive oil, lemon juice, honey, vinegar, garlic powder, salt, and pepper.
  7. Drizzle the dressing over the salad.
  8. Gently toss until the ingredients are evenly coated.
  9. Serve immediately or refrigerate briefly before serving.

Notes

For the best texture, add the dressing shortly before serving. If preparing ahead, keep the dressing separate and toss just before serving. Leftovers can be refrigerated, but the strawberries and cucumbers will soften over time.
