Method
- Place celery, carrots, onion, and garlic in the bottom of the slow cooker.
- Pour broth or bouillon mixture over the vegetables.
- Combine all seasoning rub ingredients in a bowl.
- Pat the chicken dry and rub with lemon juice.
- Coat the chicken evenly with the seasoning mixture.
- Place chicken on top of the vegetables.
- Cover and cook on low for 6 to 7 hours or high for 4 to 5 hours.
- Remove chicken carefully and place on a baking sheet.
- Broil for 3 to 5 minutes until skin is crispy.
- Rest for several minutes before slicing and serving.
Notes
Use a meat thermometer to ensure the chicken reaches 165 degrees Fahrenheit. Broiling the chicken after slow cooking helps crisp the skin.
